This was such a lovely activity to do with my little guy for Valentine's Day tomorrow. Just some pics of pastry from the freezer sections, cherry pie filling and piece of his construction paper to make a template.

He did such a great job filling the pastries, using the fork to score the edges and he was so gentle when putting the heart on top! ❤️❤️❤️❤️

This weeks bake: panna cotta! Nice and easy bake for a crazy super bowl Sunday and it was an easy thing to make ahead of time. A nice tang of the buttermilk pairs so nicely with the vanilla bean!

My son loved it! Topped it was some raspberry jam for a lovely swirl!

This week we're jumping into Salt, Fat, Acid, Heat with this Almond and Cardamom teak cake! Definitely out of my comfort zone, but with flavors to die for! I was especially looking forward to this with a cup of my favorite tea

Sometimes I feel like I could go onto an episode of "Nailed it". Flavors on point, presentation lacking but this is all about growth and stepping outside my comfort zone! Chocolate cupcake with Carmel filling, vanilla buttercream and moon shaped sugar cookies.

But that's what I love about baking, there's always something to improve, there is only ever nearing perfection, and every time is another learning experience. This was my first time filling a cupcake with caramel and my first time making caramel. My buttercream and royal icing which I've made a thousand times just didn't want to cooperate, but sometimes you just need to show yourself grace. My kids were right there, they're young, but I want them to learn about giving yourself grace and the necessary time to grow, even if it takes a while!

The cupcake was inspired by an AI design based on a line from Its a Wonderful Life:

"What do you want, Mary? What do you want? You want the moon? Just say the word, and I’ll throw a lasso around it and pull it down"

Tried another recipe from the Blue Zones cookbook, we traveled to Sardinia and made the Porcini Risotto, we made a couple tweaks to the recipe (mainly more cheese and some butter). It was a great way to hide some vegetables in a meal my kids like!

Also please excuse the "non-aesthetic" kitchen, but is there a way to take an appealing photo of risotto?!

One of my favorite things to try with baked goods, browning the butter. It just takes a couple more minutes to do and just leaves your kitchen smelling warm and nutty, and always makes a nice transition to baked cakes, breads and treats!
